While gingerbread dates from the 15th century, the gingerbread man’s creation in the 16th century is credited to Queen Elizabeth I of England, who is thought to have served gingerbread figurines to visiting dignitaries. Its association with the holiday season, which didn’t occur until the 17th century, is attributed to the belief that spices heated you up in the winter.
